One of the most spectacular meals I’ve had this year. It was held in a secluded aspen grove at 9,500 feet.
The summer Alpine Table event was a multi-course dinner at Beaver Creek. Dishes were crafted by chefs at Resort’s most iconic eateries and cost $195 per person.
The aspen dinner at the summit began with a scenic chairlift ride midway up the mountain. At the top, we enjoyed a cocktail hour on the patio of Mamie’s Mountain Grill. It featured unlimited drinks, live music, and sweeping vistas.


At the appointed time, we followed the hosts along a rugged trail, encountering a series of farm-fresh appetizers along the way. The final destination was a communal table surrounded by quaking aspen trees and adorned with fresh cut flowers.

The three course meal included house made bread and ricotta and burrata with Palisade peaches. Colorado wagyu with Cuban-style oxtail followed, with a snap pea semi freddo for dessert.


Every year, Beaver Creek Resort delivers two signature culinary events: one in the summer, one in the winter. Each time, the venue and format changes so each event feels unique. This event required six months of planning and coordination from multiple departments. Ultimately, the complexity and logistics of the venue made those details essential, but the effort paid off.


Honestly, I don’t know how they are going to top this one, because the experience was without flaws and felt so special. The dinner series only ran for two evenings (July 17-18, 2026), so I’m just sad more people didn’t get to experience it.
